Here is a simple recipe for making chicken fried rice:
Ingredients:
- 1 cup uncooked long grain white rice
- 1 3/4 cups water
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil, divided
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 boneless skinless chicken breasts, cut into small pieces
- 2 large eggs, lightly beaten
- 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans), thawed
- 3 tablespoons soy sauce
- 1/4 teaspoon black pepper
- Optional garnish: chopped scallions or cilantro
Instructions:
- Rinse the rice in a fine mesh strainer and drain well. Add the rice to a medium saucepan along with the water and salt. Bring the water to a boil over high heat, then cover the pot and reduce the heat to low. Simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Remove the pot from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and set it aside.
- Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Add the garlic and onion and stir-fry for 1-2 minutes or until the onion is translucent.
- Add the chicken to the skillet and stir-fry for 4-5 minutes or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set it aside.
- Add the remaining tablespoon of oil to the skillet. Pour the eggs into the skillet and stir-fry for 1-2 minutes or until they are scrambled and cooked through. Push the eggs to one side of the skillet.
- Add the thawed vegetables to the skillet and stir-fry for 2-3 minutes or until they are heated through.
- Add the cooked rice, chicken, soy sauce, and black pepper to the skillet. Stir-fry everything together for 2-3 minutes or until the rice is heated through and everything is evenly mixed.
- Taste the chicken fried rice and add more soy sauce or black pepper as needed. Serve hot, garnished with chopped scallions or cilantro if desired.
